Power Waffle Sandwich

Whole milk 1½ Cups
All-purpose flour 2 Cups
Baking powder 3 Teaspoons
Eggs 2 Eggs
Sugar 2 Teaspoons
Melted butter (at room temperature) 2 Tablespoons
Grated parmesan cheese 2 Tablespoons
Chives, finely chopped 1½ Tablespoons
Salt ¼ Teaspoon

Cooking spray
Butter ½ Tablespoon
Egg 1 Egg
Arugula or microgreens ½ Cups
Maple syrup

Step 1
1. Preheat waffle iron and spray with your favorite cooking oil.
2. In a large bowl, mix the flour, baking powder, salt, sugar, parmesan cheese, and chives with a fork until well combined. In a separate bowl, beat the eggs and milk together.
3. Add the liquid ingredients to the dry and whisk until combined (don’t overmix if you want the waffles to be fluffy). Add the melted butter to the batter and stir in until combined.
4. When your waffle iron is ready, pour the mixture to cover and cook as directed by your iron or until the waffle is a golden brown color. Remove from iron and set aside for building the sandwich.
Step 2
1. Heat a small frying pan over medium heat with some cooking spray (or butter, if you want crispy edges to your fried egg).
2. When the pan is hot, crack your egg into it, and cook to desired doneness (but be sure the yolk is still bright yellow and runny). Remove from heat and set aside for plating.
3. While the egg is frying, spray some cooking oil into a separate medium-sized frying pan over medium-high heat, and add the sausage patties, spaced evenly apart. Cook 2 - 2½ minutes on each side, turning a few times until each patty is golden brown.
Step 3
1. Cut waffle into thirds.
2. Use one waffle as the base, topping it with some butter and arugula or microgreens.
3. Layer with another waffle, and add the cooked sausage and the fried egg. Top with the final waffle and drizzle with maple syrup.
4. We like to slice the yolk on the fried egg and let it run!
