Mummy Meat Loaves

Ingredients

Large red potatoes, peeled and diced 2 Potatoes
OZO™ Plant-Based Ground 1 Package
Large egg (regular or flax) 1 Egg
Ketchup 2 Tablespoons
Worcestershire sauce 1 Teaspoon
Panko or plain bread crumbs ⅓ Cup
Medium carrot, peeled and finely chopped 1 Carrot
Sour cream (plant-based or regular) ½ Cup
Butter (vegan or regular) 2 Tablespoons
Salt & Pepper (to taste) To Taste
Green peas, fresh or frozen 12 Peas

Directions

Step 1
Preheat oven to 375°F.
Step 2
Line a muffin pan with 6 foil baking liners.
Step 3
Place potatoes in a medium pot and cover by 1 inch of water. Bring to a boil and cook until just tender, about 15-18 minutes.
Step 4
While the potatoes cook, mix the OZO Plant-Based Ground, egg, ketchup, Worcestershire sauce, bread crumbs, and carrot together in a medium bowl.
Step 5
Divide the meat mixture among the foil liners, transfer to oven, and roast until the internal temperature reaches 155°F, about 14 to 16 minutes.
Step 6
Drain the potatoes and place in a bowl. Add the sour cream and butter and use a potato masher or hand mixer until the contents are very smooth. Transfer to a plastic bag and cut the tip off for piping.
Step 7
Place the meat loaves on a platter and pipe the potatoes back and forth over each top to resemble a mummy's wrapping. Place 2 peas on each for eyes and serve!
