Mediterranean Lettuce Cups

OZO® Plant-Based Ground 12 oz.
Extra-virgin olive oil 1 Tablespoon
Garlic cloves, minced 3 Cloves
Kosher salt ¾ Teaspoon
Dried oregano 1 Teaspoon
¼ teaspoon ground black pepper ¼ Teaspoon
Iceberg or butter lettuce 1 Lettuce Head
Red pepper hummus 10 oz.
Cherry tomatoes, halved 1 Cup
Cucumber, diced 1 Cup
Mint leaves, chopped 3 Tablespoons
Pine nuts, toasted 2 Tablespoons
Plant-based Ground


Step 1
Warm oil in a 12-inch nonstick skillet over medium heat.
Step 2
Add ground, garlic, salt, oregano, and black pepper and cook until internal temperature reaches 165°F, breaking it up with a spatula as it cooks, about 4-5 minutes. Remove from heat and let cool for 10 minutes.
Step 3
In a medium mixing bowl, add cooked ground and toss with tomatoes and cucumber.
Step 4
Cut the base of the lettuce head and carefully peel the leaves away so they stay as intact as possible. Place leaves on a platter.
Step 5
Spread 1-2 tablespoons hummus onto each lettuce leaf. Place about ¼ cup of the ground mixture in the center of each.
Step 6
Top evenly with tomatoes and cucumber. Garnish with mint and toasted pine nuts. Serve immediately.
