Loaded Quesadillas

Ingredients

OZO™ Plant-Based Mexican Seasoned Ground 1 Package
Vegetable oil 2 Tablespoons
Red pepper, diced 1 Each
Yellow onion, diced ½ Each
Black beans, drained and rinsed ½ Cup
Frozen corn ½ Cup
Chili powder 1 Teaspoon
Ground cumin 1 Teaspoon
Butter, melted 2 Tablespoons
Salt (to taste)
Pepper (to taste)
Mexican cheese, shredded 2 Cups
Tortillas 4 Large
Sour cream and salsa, to serve

 

Plant-based Mexican Seasoned Ground

Directions

Step 1
Add oil to a large skillet over medium heat. When hot, add the peppers and onions and cook for 5-7 minutes or until tender.
Step 2
Add the OZO Plant-Based Mexican Seasoned Ground and cook for 4-5 minutes, breaking it up with a spatula as it cooks.
Step 3
Add the black beans, corn, chili powder, and ground cumin and cook for another 2-3 minutes.
Step 4
In another skillet, top half of one tortilla with a heavy sprinkling of cheese (about ½ cup). Then add 1 cup of the cooked OZO mixture, and another ½ cup of cheese.
Step 5
Fold the other half of the tortilla over and cook, flipping once, until golden, about 3 minutes per side. Repeat for each of the other tortillas.
Step 6
Slice and serve with salsa and sour cream.
