Double Animal Style Burgers

Large yellow onion, sliced thin (yield 1½ cups) 1 Onion
Unsalted butter 2 Tablespoons
Kosher salt ½ Teaspoon
American cheese 4 Slices
Hamburger buns 2 Buns
Yellow mustard 4 Tablespoons
Medium tomato, cut into ¼-inch slices 1 Tomato
Dill pickle chips 8 Chips
Iceberg or butter lettuce 4 Leaves
For the Sauce
Mayonnaise ¼ Cup
Dill pickle relish 3 Tablespoons
Ketchup 2 Tablespoons
White vinegar 1 Teaspoon
Granulated sugar ½ Teaspoon
Smoked paprika ¼ Teaspoon
Ground black pepper ⅛ Teaspoon
Plant-based Burger Patties


Step 1
In a 12-inch nonstick skillet over medium-low heat, add onions, butter, and salt and cook, stirring frequently until the onions are golden and caramelized, about 20-25 minutes. Transfer to a medium bowl and set aside.
Step 2
Add all sauce ingredients to a small mixing bowl and whisk to combine. Adjust seasoning to taste and place in refrigerator until ready to use.
Step 3
Preheat griddle to 325°F and spray with nonstick cooking spray. Cook burgers about 3-5 minutes on one side, then flip and top each with a slice of cheese. Continue to cook until cheese has melted and internal temperature is 165°F. Remove from heat.
Step 4
Top each bottom bun with 2 tablespoons mustard, roughly ¼ cup of the fry sauce, 4 slices pickles, 2-3 slices tomato, and 2 lettuce leaves, then place a cooked patty. Divide caramelized onions evenly between each burger, then place another patty over the onions. Finish with the top buns, and serve immediately!
