Burrito Egg Rolls

Ingredients

Canola oil 1 tablespoon
OZO™ Plant-Based Mexican Seasoned Ground 1 package
Red bell pepper, diced ¼ cup
Green bell pepper, diced ¼ cup
Red onion, diced ¼ cup
Jalapeno pepper, seeded and diced 1 tablespoon
Chili powder 1 teaspoon
Ground cumin 1 teaspoon
Smoked paprika ¼ teaspoon
Garlic powder ¼ teaspoon
Sea salt ¼ teaspoon
Ground black pepper ¼ teaspoon
Cheddar cheese, shredded 2 cups
Black beans, rinsed and drained 1 8oz. can
Frozen corn kernels, thawed ½ cup
Egg roll wrappers 14 items
Avocado Dip (Recipe Below)
Plant-based Mexican Seasoned Ground

Directions

Step 1
Add oil to a large nonstick sauté pan over medium heat. Cook the OZO Plant-Based Mexican Seasoned Ground until browned and crispy, breaking it up with a spatula as it cooks.
Step 2
Add red and green peppers, onion, jalapeño, and seasonings to pan. Cook until vegetables have softened, 3-4 minutes. Remove from heat and let cool slightly.
Step 3
Once cooled, add ground mixture, cheese, black beans, and corn to a medium mixing bowl. Stir to combine.
Step 4
On a clean work surface, set an egg roll wrapper in a diamond shape. Spoon ¼ cup of the burrito mixture in the center. Fold up bottom half and sides of the wrapper, then tightly roll, sealing the seam with a few drops of water brushed along the edge. Place roll on a nonstick sheet pan. Repeat with remaining filling and wrappers.
Step 5
In a large, deep pot, heat 1-inch vegetable oil over medium heat to 350°F. Working in batches, add egg rolls and fry until deeply golden, approximately 1-2 minutes per side. Use a slotted spoon or tongs to remove rolls and drain on a paper towel-lined plate. Repeat with remaining rolls.
Step 6
Serve warm with avocado dip (see recipe below).

Cilantro, packed ¼ cup
Greek yogurt ¼ cup
Olive oil ¼ cup
Lime juice ¼ cup
Garlic clove 1 item
Ground cumin ½ teaspoon
Sea salt ½ teaspoon
Ground black pepper ½ teaspoon

Directions

Step 1
Place all ingredients along with ¼ cup water in a blender. Blend until smooth, adding more water to thin if needed.
Step 2
Pour into a small bowl and refrigerate until ready to serve.
